Raw Superfood Earth Day Cake Pops


One of the best things you can do to positively impact the environment is to jump aboard the plant-based diet train. This Earth Month, we’re encouraging you to choose dairy-free and egg-free treats, like these raw, no-bake cake pops! Take it one step further and go for a walk outside to find the *perfect* cake pop skewers provided by Mama Earth – sticks! Infused with nourishing superfoods, including moringa, hemp seeds and more, these cake pops are sure to bring you all the feel-good dessert vibes (without the guilt!).

Ingredients

  • ½ cup raw cashews
  • 1/3 cup oats
  • 1 Tbsp. Planet Protein Vanilla Magic
  • 1 Tbsp. mixed seeds of choice (we like hemp and chia)
  • ½ tsp. cinnamon
  • 3-5 dried figs
  • ½ cup dates

Toppings

  • Moringa powder
  • Blue butterfly pea powder or blue spirulina powder
  • Unsweetened shredded coconut

Instructions: Cake Pops

  1. In high-speed blender or food processor, combine all ingredients (add dates last). Blend or pulse mixture, starting on low speed, to combine. Gradually pick up speed to fully incorporate ingredients. Once cake pop “dough” is sticky to the touch, you’re ready to roll!

  2. Roll dough into 8 balls.

Instructions: Toppings

  1. Spoon blue butterfly pea powder onto small plate. Dust moringa on top (do not blend powders). On another small plate, pour on shredded coconut.

  2. Take one cake pop ball and gently roll into moringa mixture for a blue-green, tie-dye-esque design. Next, dab ball into coconut so some of it sticks. Repeat with remaining cake pop balls. Insert stick and enjoy immediately or refrigerate before serving. Tip: Dust with more coconut for a cloudier look!
